This is a simple salad. A simple, pretty salad. It’s not astrophysics.
If it was astrophysics, maybe Neil deGrasse Tyson would walk us through it. Break down the different parts of this salad and explain it to you and I so it would actually make sense.
He would be so enthusiastic about this salad and the universe around it that you too will want to learn all about it. You might turn to your loved one and say I think I can wrap my brain around this. I think I understand it now, sort of, maybe,most of the time. That how good Neil is. Can I call him Neil? Is that to personal? Well I’m doing it. Neil makes the universe and astrophysics-worthy salads intelligible and just plain fun. I think he is the bees knees.
But alas this salad is not astrophysics. It’s a simple salad that we can easily wrap our heads around. Thank you Neil deGrasse Tyson your work is done here.
There are no rules to this salad. You can add or subtract what you would like.
I used kale and red cabbage and added green pepper, onions and carrots because I had them and the colors were so lovely together. Pretty.
My dressing only had three ingredients plus some salt and pepper. Simple. It’s almost too easy but there is nothing wrong with easy if it tastes good.
So whip up this little number, serve it with some shrimp & corn cakes and imagine sitting on your deck talking over the marvel of the cosmos with your good friend Neil. Enjoy!
Kale & Red Cabbage Salad
ingredients:
1/2 head red cabbage, shredded
4 Cups Kale. torn
1/2 green pepper, diced
1/2 onion, sliced
1 carrot, shaved
1/2 cup sugar
1/2 cup apple cider vinegar
1/4 cup toasted sesame oil
Salt and pepper to taste
In a large bowl add Kale, red cabbage, onion, peppers and carrots. Mix. In resealable jar add sugar, sesame oil and vinegar. Shake it up. Pour over salad, add some salt and pepper to taste. Add anything you would like really, it’s your salad. Just enjoy!
