Ahoy there! That’s some sailing talk I picked up this past week on a cruise to Bermuda. That’s not true, if anyone did say that I didn’t hear it. I don’t really know what to say about the cruise. There was good and bad.
Good, I had a week off of work to spend with my mom and sister and being on the water. Bad, I missed my husband and pups terribly. Good, Bermuda is beautiful and I have already been there so I just spent the time wandering with my camera. Bad, I feel like I ate a ton of food because nothing really tasted the way I wished it would and so I was never really full.
Good and Bad, my sister and I live at opposite ends of the country so to get to see her is a treat but then by day 7 …blerg. She easily falls back into her post as big sister who likes to point out all of my life’s mistakes or short comings not caring that I am in my 30’s. My thoughts of maybe a slight push over the edge is removed by my excusing myself to one of the ship’s pubs for some gin. Then the vacation can resume.
But when all is said and done I was happy I got to go and I am happy I am home with my boys. I did make a little list of the meals that I was looking forward there and they just didn’t do it for me. Does that seem snobby? Sorry, I’m still on smart-ass comeback mode so I’m not sure if I’m being rude or not. But anyway, I have some kitchen work to do to make them tasty and to share.
Until then I needed something hardy but not covered in an over salted yet bland gravy. I needed cabbage,roasted, plain and simple.
I needed to make it while my boys (including my husband..bestill my heart) followed me around making sure I didn’t go away for long again.
I needed to add just some olive oil and pepper and a little kosher salt and roast in the oven while I told them of the Paul Giamatti look-alike and the towel elephant in our room.
I needed to gobble up all that cabbage and be surrounded by my boys sweet faces and know that I am home and loved.
This is such an easy side you don’t need any rules. I used a 1/4 head of red cabbage and 1/4 head of green cabbage. Cut it up any way you want, add a good gulp or two of olive oil. Sprinkle with pepper and kosher salt to your preference and roast in a 425 degree oven until browned. Mine took about 30 minutes. So good..enjoy maties!
Ah, vacations. Sometimes they can be stressful. But that sky!! Makes me want to get on the first plane to Bermuda.

Veggies roasted are the way to go. I grew up with them boiled all the time and don’t get me wrong that was fine, I ate them all up too. But roasted with olive oil…swoon!
