Do you buy a pineapple, go home, place said pineapple on your table in your kitchen and then make it part of your kitchen decor? Maybe you move it by some plants. Cute, it fits right in. Maybe it then acts as a centerpiece on your island and you get home from work and sort of just shove your mail under it. Maybe your husband asks you why you are putting the mail under the pineapple and maybe you have no answer because there is no rational reason to put mail under a pineapple that is acting as temp centerpiece, it just makes you giggle. Luckily said husband knows after 13 years that his wife is weird.
Anyway, do you play this little interior design game a bit too long and then, your pineapple has gone south? Yeah, me too. So sad, now where am I going to put the electric bill?
Don’t worry, it doesn’t happen that often. My desire to eat pineapple usually prevails and then sometimes you can come up with little gems like this Roasted pepper & lime pineapple rings to add to your ice cream…so good and so simple.
First up, destroy…I mean cut up your pineapple. I am terrible at this and that could play a part in my delaying. But I soldier on and a handy tip, I use one of my cannoli tubes to cut out the core.
Then you can slice up your rings into what some might call circles? I wouldn’t, I don’t know what I did here but feel free to be like me and not worry about it and why not eat a few while you are at it, I did.
Get your Lime, black pepper and some brown sugar.
Place them on a parchment paper lined baking pan and juice your lime over all of the pineapple. Then sprinkle brown sugar and pepper over all of them. Try not to give your husband the pineapple that may have gotten a bit too much pepper as he doesn’t like spicy/peppery things that much and was all ready sceptical but tried it and oops, I gave him the wrong one. Blerg!! Good news, after the pepper shock of that one bite he ate it all and enjoyed it and had another bowl. Yes!
Roast in a 425 degree oven for 25 – 30 minutes. Try to tell your beagle that he does not want to eat this. He is not convinced. Take note of the pineapple in the back with the concentrated black spot of all pepper. Try not to be a space cadet and DO NOT give that piece to your pepper shy husband. Sorry, I’m the worst.
Let cool a bit and then cut up and serve with vanilla ice cream or any ice cream you want. So good, the ice cream melts a bit from the slightly warm pineapple and the pepper isn’t too strong (for most) because the vanilla cuts some of the bite and who can go wrong with lime? Enjoy!
Roasted Pepper & lime Pineapples with Vanilla Ice Cream.

Ingredients
1 pineapple peeled, cored and cut into 1/4 ” rings
1 lime
1 tablespoon brown sugar
1/8 – 1/4 teaspoon black pepper ( add more of less to your taste)
Vanilla ice cream
Preheat your oven to 425 degree. Take your pineapple rings and place them on a parchment paper lined rimmed baking pan. Squeeze the juice of 1 lime over pineapple rings. Sprinkle brown sugar and pepper over all of the rings. Place in oven and roast for 25 to 30 minutes. Let cool slightly and cut into chunks and place a few pieces into a bowl. Add vanilla ice cream or flavor of your choice and enjoy. Delicious summer dessert that even pleases picky pepper people.
