Are you lamenting the end of summer? Well than you probably want to skip ahead a couple of sentences.
Ready? Have you looked away? O.k. Here we go.

So long summer chumps, hello what I like to consider the greatest of all seasons, FALL!!!
Oh my, I’m sorry. I don’t what came over me. I am very tired from still having no days off. Maybe that’s it. Sorry about the whole chump thing. I feel dreadful on the inside, sinserly…But I did warn you. Lets call it even. I’ll make you a salad for old summer-time sake.
This salad is so easy peasy that even those short of any free time can throw it together in the AM. Pop it in the fridge. Work/go to school..whatever. Come home. Take off your shoes. If you are like me your shoes were already removed in your car at work, traded for a pair of flip-flops because my feet need freedom as soon as humanly possible.
Anyway.
After you handle your shoe situation you have a couple of options.
One, you can go right to fridge and eat the salad because you have worked hard all day and are starving. You do not need to put the salad on a plate. You can grab a fork and eat it right from the container you stored it in. You can eat it all because before you know it you will have. It’s okay. Your husband doesn’t like tomatoes or cucumbers. You can eat all of it. You must tell yourself that your spouse doesn’t eat one or two of the ingredients. This will wash away your guilt of eating this all yourself standing at the kitchen counter still wearing your scrubs and a pair of flip-flops.
Now there is option two in where you serve this with dinner. In my case my husband really doesn’t eat tomatoes or cucumbers so this option is bust. You should just go with option one. It’s the best choice. Do it!
After you have chopped your three veggies (how simple) we make the dressing. Dill!
Some busy bodies have to always know what you are doing. It’s okay, tell him you are making an amazing salad. It’s true!
Put your veggies in a bowl and add your dressing.
Mix it all up, cover and put in the fridge for at least 3 hours. Oh man this is gonna be so good.
Now go about your life while all the flavors are mingling and then when you are ready gobble this all up. Or share. You be the person you want to be. Not my call.
ingredients
1 medium cucumber peeled and sliced on the thin side
8-10 cherry tomatoes sliced in half
1/2 onion sliced thin
1/3 cup apple cider vinegar
1/3 cup water
2 tablespoons sugar
3/4 teaspoons kosher salt
1/2 teaspoon pepper
some fresh chopped dill if you like.
Put your sliced veggies in a bowl. In a resealable jar add water, vinegar, salt, pepper, sugar and dill if using. Shake it up and pour over salad. Mix it all up, cover salad and let refrigerate at least 3 hours. When serving you can drain out the vinegar dressing but I like to keep it. This salad never hangs around long enough to get to soggy. Enjoy and hope this calls us even on my little snide remarks about summer. But come on, Fall is the best and you know it.
