What gives mother nature?
It’s still cold.
My daffodils want to know what’s up and my ankle socks say hey, were ready.
Jen fact: I can only handle two lengths of socks if any at all.
Knee-high or ankle. Anything in-between is just weird.
Any who, I guess I’m not in a big outrage. I’m still figuring out a good schedule for myself and I would hate to think I missed spring.
Plus the chill in the air means it is still a good time for soup!
Huzzah for soup!
This one has a nice kick to it thanks to the mustard, ginger and caraway seeds. Raise your hands if caraway seeds make you swoon.
No one, is that odd? I just mean that caraway seeds take whatever they’re in up to 11. It’s a fact, you know it, it’s okay if you don’t want to say.
I would totally bring this cabbage soup to your house if you were sick. It is brothy and vegetabley and spicy and is gonna make you want to eat it everyday for lunch, I did.
You should too, even beagle was intrigued. Silly beagle, soup is for me. and you!
Cabbage Soup
ingredients
2 Tablespoons butter
1 + 1/2 cups chopped onion – about 2 small onions
1 cup chopped celery
3 cloves garlic minced
1 teaspoon minced ginger
1 quart beef broth
1 quart water
3/4 cups sliced carrots
1/2 head red cabbage sliced
1/4 head green cabbage sliced (you should have about 1+1/2 LB of cabbage total)
1 teaspoon ground pepper
1/2 teaspoon dry mustard
1 tablespoon caraway seeds
salt to taste
In a heavy pot melt your butter, add your onions and celery and saute until the onions become soft, mixing occasionally. After about 10 to 15 minutes add garlic and ginger, stir for about 5 minutes. Add carrots, cabbage. pepper, mustard and caraway seeds and mix. Then add beef broth and water and turn heat to medium and bring to a boil. After reaching a boil give soup a good stirring to mix ingredients and turn heat to low. Cover and let simmer for about 30 minutes. Salt to taste and serve with some bread! Enjoy!
