The lemon Citrus limon Osbeck is a small evergreen tree from the flowering plant family Rutaceae, which is native to Asia.

The tree's ellipsoidal yellow fruits are used for culinary and non-culinary purposes around the world, especially for its juice, which is both culinary and cleansing. The pulp and peel (peel) are also used for cooking and baking. The juice of the lemon consists of around 5% to 6% citric acid, which gives it a sour taste. The characteristic sour taste of lemon juice makes it an important ingredient in beverages and foods like lemonade and lemon meringue tart.

Lemon juice, rind, and lemon peel are used in a wide variety of foods and beverages. Lemon juice is used to make lemonade, soft drinks, and cocktails. It's used in marinades for fish, where its acid neutralizes amines in fish by converting them to non-volatile ammonium salts, and in meats where the acid partially hydrolyzes tough collagen fibers and tenderizes the meat, but the low pH makes the proteins Denatured and caused them to dry out when cooked. Lemon juice is widely used to add pancakes in the UK, especially on Shrove Tuesday.

Lemon juice is also used as a short-term preservative for certain foods that oxidize and turn brown (enzymatic browning) after cutting, such as apples, bananas, and avocados, with their acidity denaturing the enzymes.

Jam, lemon quark and lemon liqueur are made from lemon juice and peel. Lemon slices and lemon peel are used as a side dish for food and drinks. Lemon peel, the grated outer peel of the fruit, is used to add flavor to baked goods, puddings, rice and other dishes.

The leaves of the lemon tree are used to make tea and cooked meat and seafood.
