I like to add a handful of roasted, salted pistachios to the ice cream. Because salty complements sweet perfectly. Of course, you can also let them out. My extra tip: You can usually get pistachios much cheaper in oriental grocery stores.

Preparation steps

Finely grind the unroasted pistachios with half of the sugar in the food processor. Heat with milk and cream, but do not boil.
Beat the egg yolks with the remaining sugar until light yellow. Add the hot cream mixture in a thin stream, while continuing to mix.
Heat the egg cream in a water bath to 75 ° C, stirring further. Remove the bowl from the water bath and place in a larger bowl with ice water. Stir occasionally and allow to cool to refrigerator temperature.
Pour into the ice cream maker and let freeze for a total of 1 hour. Chop the roasted pistachios and pour into the ice cream machine about 5 minutes before the end and stir in.
Serve ice cream immediately or let it set in the freezer for 1-2 hours for a firmer consistency.
