kale soup with chorizo 2We have moved beyond a crispness in the air to a most definite chill.

Not complaining, I enjoy winter and cold weather.  I don’t enjoy shoveling snow or my car sliding on ice but we won’t think of that now.  We will think of knit hats and scarves,  wearing knee-high socks, hot toddy’s and steamy warm bowls of soup.

I don’t know about your neck of the woods but summer is in full swing here on the Cape.

Like bananas.

It always gets crowded but this year is pure madness. People are everywhere!

I’m having little panic attacks with all these crowds.  Don’t worry about me though, I’m a tough little cookie.  I’m make it through to Fall.

Sweet, sweet Fall.  I miss you!  My corduroy, scarves and boots are waiting!

But since it is summer and it is crowded I’m going to share with you one of my households go to meals so you don’t have to stand in line at a fish fry shack.

Coconut shrimp!  It is one of my husband’s favorite and he requests I make it often.  It is crunchy with a little touch of sweetness and so simple.  Like ridiculously simple.

It goes perfect with these onion rings and since it is summer and blueberries my food of choice this buckle for dessert.

There, now you have a perfect summer meal to have at your home oasis away from the crowds!

(I’m not kidding, it is bananas out there!)

chicken taquitos

Food ruts.

It’s a problem and it happening in kitchens all across america people.

No?  Is it just my kitchen?

Well that’s the pits.  I’m alway the odd man out.

I’m not ashamed. Sometimes you have so many kitchen failures you stop trying.

Sometimes you just go blank and make what you know.

Well it’s time to pick ourselves back up, shake it off and retry.

Derby Lessons!  Or maybe that’s from batman?  Either way it works in this here kitchen scenario.

I have so many recipes ripped out, pinned and bookmarked that I want to try I need to just get at it

So without further ado I give you Chicken Taquitos!

I made these standard size, added some cream cheese and acting as a bizarro Emerald, took it down a notch.

I do not live underwater.

The Shutterbean household enjoys some spicier flavors than some of the residents here in Fidgetsville…Cough….Adam!

But you can make it however you like in your kitchen kingdom.

They are so tasty and not at all difficult to make.  Oh and a heads up, the avocado honey lime dip is swoon worthy.

You will want to put that on any carb you can find and you know what, you should.

What gives mother nature?

It’s still cold.

My daffodils want to know what’s up and my ankle socks say hey, were ready.

Jen fact: I can only handle two lengths of socks if any at all.

Knee-high or ankle.  Anything in-between is just weird.

Any who, I guess I’m not in a big outrage.  I’m still figuring out a good schedule for myself and I would hate to think I missed spring.

Plus the chill in the air means it is still a good time for soup!

Huzzah for soup!

This one has a nice kick to it thanks to the mustard, ginger and caraway seeds.  Raise your hands if caraway seeds make you swoon.

No one, is that odd? I just mean that caraway seeds take whatever they’re in up to 11.  It’s a fact, you know it, it’s okay if you don’t want to say.

I would totally bring this cabbage soup to your house if you were sick. It is brothy and vegetabley and spicy and is gonna make you want to eat it everyday for lunch, I did.

You should too, even beagle was intrigued.  Silly beagle, soup is for me.  and you!

I don’t know about you guys but when I get home from work I am hard-wired to eat.

I’m not ready for dinner per say.  In fact we are late eaters but I do need something.

I try to be proactive and have something good for me waiting.

You know, like this.  Something good and delicious and easy to get at so I don’t just jam handfuls of cheez-its and jelly beans into my face.  It happens, it’s not pretty looking.

Well that’s where this salad came about. I prepped it on a Sunday and thought it should get me through Wednesday.  You are one smart cookie Jennifer.  You got this adult thing figured out.

What you don’t have figured out is how not to keep “taste-testing” this amazing salad on Sunday and then eat all of it on Monday!
